Vasilopita recipe by Stelios Parliaros

Just a day before 2016, we present an amazing recipe by Stelios Parliaros for “vasilopita”, the traditional cake Greeks prepare to welcome the new year.
Ingredients:
- 300 g. dried figs chopped
- 200 g. cognac
- 250 g. LURPAK butter
- 250 g. powdered sugar
- 6 large eggs
- 250 g. powdered hazelnuts
- 250 g. flour for all uses ALLATINI
- 1 table spoonbBaking powder ALLATINI
Chop the figs and soak them in cognac for one night.
Mash thoroughly . Melt the butter. Mix sugar, eggs and butter. Add the pureed figs, ground hazelnuts, flour and baking powder. Pour the mixture in a pan of 28 cm diameter. Bake in preheated oven at 160oC for 1 hour.
