Ingredients for 30 pieces

3 cups flour for all uses, sifted

30g. powder yeast

½ tablespoon of baking powder

½ tablespoon of baking soda

2 tablespoons of white sugar

A pinch of salt

1 cup of lukewarm water

2 cups of vegetable oil for frying

1 cup of honey

Ground cinnamon and ground walnuts for serving

Execution

Dissolve the yeast in ½ cup of lukewarm water and set it aside.

Mix the flour with the baking powder, the baking soda, the sugar and the salt in a large bowl. Add the yeast and the rest of the water. Beat the mixture in a mixer for 3 minutes at medium speed, until the flour is dissolved. Cover the bowl filmly and leave it in a warm place for 2 hours, until it doubles in size.

When doubled, heat the oil in a deep pan until it is well warmed but not smoked.

With the help of two spoons, put small amounts of the mixture (about one teaspoon) into the hot oil. Turn the donuts with a slotted spoon and fry until brown on all sides. Remove from the pan and place them on a platter covered with kitchen paper in order the oil to be absorbed. Dip the “loukoumades”  in honey and sprinkle with cinnamon and walnuts. Serve immediately.
