Traditional recipe for lalagia of Mani

Mani is famous for its delicious and authentic cuisine inspired by the Peloponnesian traditional products. Today we cook the famous Lalagia of Mani, one of the most popular dishes of the region, a national tradition of local people. Enjoy lallagia of Mani by following the recipe of the famous Greek chef Elias Mamalakis.

Ingredients for 1 large tray

1 kg all-purpose flour

¾ cup of olive oil

1 sachet of dry yeast

salt

some lukewarm water

oil for frying

1. In a large bowl, add the flour and pour with the oil. Knead with your hands until the mixture becomes a crumbled dough. Season with salt and knead again.

2. Dissolve the yeast in a glass of water, pour it in the mixture of flour and knead again.

3. Add lukewarm water so as to create a soft dough. Then cover with plenty of towels and let it rise for 1 hour.

4. After that knead again and cut the dough into large balls. Shape each ball into a cord. Cut the cord at 3 and fold each piece so that it becomes round placing one end above the other.

5. Heat plenty of olive oil in a deep pan and once heated up well, fry Lalagia until they are golden on all sides.

6. They can be reserved for a long time and have excellent taste. Enjoy them with Greek coffee and feta cheese from Tripoli.
